Egghead Review: Breakfast Sandwiches at Proper Eats Las Vegas

For years, my go-to quick breakfast spot on the Strip was Eggslut at The Cosmopolitan. I really didn’t think anything could beat their breakfast sandwiches.

But on my last trip, I finally tried Egghead inside the Proper Eats Food Hall at ARIA to see if their $13 Midtown sandwich could compete. With perfectly cooked bacon and crispy shallots, it is my new favorite breakfast sandwich on the Strip.

Proper Eats Food Hall Location & Navigation

You will find Egghead inside the Proper Eats Food Hall on ARIA’s Promenade Level. Just take the escalators next to the Breitling store straight up from the main casino floor. As you walk by the food hall, you can easily spot the Egghead counter on your left.

At almost every other spot in the food hall, you can quickly order and pay at a self-service kiosk. Egghead is the exception. You have to order with a cashier.

I found this frustrating, but luckily, there were only a couple of people in line. While the rest of the food hall had no lines to order, the ordering process at Egghead created a bottleneck. It slowed everything down and forced everyone to stand in a single line to place an order.

Once I finally ordered, I grabbed my number and waited. While I waited, I at least enjoyed peeking into the open kitchen to watch the chefs prepare dishes on the flattop grills.

Being a food hall, there is no dedicated seating. I took my food and found an open table in the general dining area.

However, there are counter tables with about eight bar stools wrapping around the Egghead kitchen and more in the surrounding area.

I managed to snag a stool right at this counter. While technically open to anyone in the food hall, these seats felt like part of the restaurant. They were also the best spots for people-watching while I ate.

The menu at Egghead is small and focused on four egg sandwiches, which keeps the kitchen moving fast.

Tip: The official Proper Eats website intentionally hides prices and their PDF menu is outdated. You can rely on the physical menu board pictured above. Expect to pay a flat $13 for any sandwich and $6 for regular hash browns.

The Midtown

I ordered The Midtown. It came with a fried egg, bacon, American cheese, sliced tomato, fried shallots, and spicy aioli.

When I took the first bite, a small amount of rich, golden yolk oozed from the over-medium egg. It was messy in the best way possible. I was using napkin after napkin. Thankfully, napkins were easily accessible throughout the food hall.

The bacon was the standout. It had a great, chewy bite with the perfect meat-to-fat ratio. It was salty, rich, and some of the best bacon I have had in a while.

A slice of fresh tomato cut through the richness, while the white American cheese held everything together. The cheese had a creamy, salty texture that you want in a breakfast sandwich.

The fried shallots reminded me of crispy onion straws. They had a sweet, caramelized flavor and a much-needed crunch to each bite.

My only complaint was the spicy aioli. It simply was not spicy. It added a creamy tang, but if you are looking for heat, you might be disappointed.

The final component was the potato brioche bread. It was airy but dense enough to hold up to the messy ingredients. It was lightly toasted on the inside, which kept it from getting soggy right down to the last bite.

Service

Since Egghead is a counter-service spot, interaction with the staff was limited.

However, I was impressed by the speed of the kitchen. Despite the line at the register, the chefs were getting orders out fast.

After placing my order, I waited only about 10 minutes before they called me. The staff at the pickup counter were polite, loud enough to be heard over the noise of the food hall, and kept the crowd moving.

Conclusion

For years, Eggslut was the only breakfast sandwich I recommended on the Las Vegas Strip.

But after eating The Midtown, I might have a new favorite. The crispy shallots and that salty bacon gave it the edge over Eggslut.

The sandwich had a better texture, the location inside ARIA is convenient, and the bun held up perfectly until the last bite.

If you are debating between the two, I highly recommend giving Egghead a shot.
