Egghead is a breakfast sandwich spot located within the Proper Eats Food Hall at ARIA Resort & Casino in Las Vegas, Nevada. Though the menu is small, it offers a good selection of creative egg-centric sandwiches, hash browns, and drinks.

I will be honest with you. It took me years to finally try this place. For years, my go-to spot has been Eggslut at The Cosmopolitan of Las Vegas. In my mind, nothing could beat their breakfast sandwiches.

But on my last trip, I decided to see if the new competitor up the Strip could actually compete. Both spots offer similar menus of egg sandwiches on brioche buns. However, Egghead offers a few creative ingredients that finally caught my attention.

I visited Proper Eats Food Hall to see if these breakfast sandwiches could live up to the hype.

Proper Eats Food Hall

Proper Eats Food Hall is a modern dining space inside ARIA Resort & Casino on the Las Vegas Strip. Finding it can be tricky if it is your first time. Just follow the signs pointing to the Promenade Level of the resort.

At Proper Eats, you will find a wide variety of dining options, including Korean fried chicken, sushi, pizza, burgers, sandwiches, and more. Upscale food halls like this have recently opened across Las Vegas to replace the old-school buffets. Just be warned that they aren’t always the cheapest.

At almost every other spot in the food hall, you can quickly order and pay at a self-service kiosk. Egghead is the exception. You have to order with a cashier.

This was frustrating. While the rest of the food hall had no lines to order, the ordering process at Egghead created a bottleneck. It slowed everything down and forced everyone to stand in a single line just to place an order.

Once I finally ordered, I grabbed my number and waited. While I waited, I at least enjoyed peeking into the open kitchen to watch the chefs prepare dishes on the flattop grills.

Because Egghead is located inside a food hall, there is no dedicated seating. You take your food and find any open table in the general dining area.

However, there are counter tables with bar stools wrapping around the Egghead kitchen.

I managed to snag a stool right at this counter. While technically open to anyone in the food hall, these seats felt like part of the restaurant. They were also the best spots for people-watching while I ate.

The Egghead menu is small. It focuses entirely on breakfast items, specifically sandwiches and hash browns. I actually appreciate a smaller menu like this. It makes deciding much faster, especially when you are hungry.

There are four sandwich options to choose from. These range from simple combinations like eggs, cheese, and bacon to more adventurous choices with kale, avocado, spicy aioli, and sunflower seeds.

Sides include a classic crispy hash brown and a cheesy hash brown with pecorino cheese. As for drinks, they offer the essentials: coffee, juice, and water.

I ordered The Midtown. It came with a fried egg, bacon, American cheese, sliced tomato, fried shallots, and spicy aioli.

When I took the first bite, a small amount of rich, golden yolk oozed from the over-medium egg. It was messy in the best way possible.

The bacon was the standout. It had a great, chewy bite with the perfect meat-to-fat ratio. It was salty, rich, and some of the best bacon I have had in a while.

A slice of fresh tomato cut through the richness, while the white American cheese held everything together. It was fully melted and added that creamy, salty texture that you want in a breakfast sandwich.

The fried shallots reminded me of crispy onion straws. They had a sweet, caramelized flavor and a much-needed crunch to each bite.

My only complaint was the spicy aioli. It simply was not spicy. It added a creamy tang, but if you are looking for heat, you might be disappointed.

The final component was the potato brioche bread. It was airy but dense enough to hold up to the messy ingredients. It was lightly toasted on the inside, which kept it from getting soggy right down to the last bite.

Service

Since Egghead is a counter-service spot, interaction with the staff was limited.

However, I was impressed by the speed of the kitchen. Despite the line at the register, the chefs were getting orders out fast.

After placing my order, I only waited a few minutes before they called my number. The staff at the pickup counter were polite, loud enough to be heard over the noise of the food hall, and kept the crowd moving.

Conclusion

For years, Eggslut was the only breakfast sandwich I recommended on the Las Vegas Strip.

But after eating The Midtown, I might have a new favorite. The crispy shallots and that salty bacon gave it the edge over Eggslut.

The sandwich had better texture, the location inside ARIA is convenient, and the bun held up perfectly until the last bite.

If you are debating between the two, I highly recommend giving Egghead a shot.
