One of the best places in Las Vegas for an affordable, delicious, Instagram-worthy breakfast is at Eggslut inside the Cosmopolitan. Eggslut started off as a food truck on the streets of Los Angeles in 2011. Today, the gourmet, upscale fast food restaurant has locations in Southern California, Seoul, Tokyo, London, and even Kuwait City. With its risqué name, bold flavors, and hangover curing egg-centric sandwiches, Eggslut has gained a cult-like following. This includes foodies, Instagram influencers, YouTube vloggers, food columnists, and food bloggers such as myself.
Though you will need to wait in line to order, the wait is worth it for their delectable sandwiches and specialties made with high-quality ingredients and fresh, local bread. Their signature dish, appropriately named the Slut, features a coddled egg placed on top of a house-made potato puree, served with slices of toasted baguettes for your dipping pleasure.

Waiting in Line
Due to its popularity, you’re going to have to wait in line. This is true no matter which location you visit. On a Friday afternoon, I waited about 15 minutes in line, which wasn’t as long as I was expecting. On weekends, expect the line to be longer, so plan ahead.
Once at the front of the line, I placed my order with the friendly cashier who told me to listen for my name. When my name was called, my food was ready and could be picked up on the right side of the open kitchen.
Being a fast food restaurant, seating at Eggslut was extremely limited. A high top counter could be found surrounding the restaurant, but these seats were often taken. An Alice in Wonderland themed area, with additional tables and seats, could be found just outside of the restaurant. Additional tables and seats could be found scattered around the Cosmopolitan.
Another great thing about Eggslut was its open kitchen. I enjoyed watching the chefs in the kitchen as they cracked egg after egg, cooked bacon on the grill, toasted brioche buns, and prepared each sandwich like a work of art. The chefs ran a well oiled machine down to the smallest detail, allowing them to pump out sandwich after sandwich in no time. Aromas of bacon, meat, butter, and eggs coming out of the kitchen were intoxicating.
The menu at Eggslut was straight to the point. This simple menu featured an assortment of sandwiches, all topped with an egg. If this is your first visit, the Bacon, Egg & Cheese Sandwich never lets me down. Those more adventurous might want to try the Gaucho Sandwich made with seared wagyu tri-tip and chimichurri sauce. Other than sandwiches, your options were limited to two specialties and a side salad or salted chocolate chip cookie. Their signature dish, the Slut, featured a coddled egg on a potato puree, served with toasted baguettes. Beverages included juice, soda, water, coffee, beer, mimosa, Bloody Mary, and wine.
Bacon, Egg & and Cheese Sandwich
While simple, the Bacon, Egg & and Cheese Sandwich ($9.00) was just what I needed after a long night in Vegas. This sandwich, served in a warm brioche bun, was made with applewood smoked bacon, a cage-free over medium egg, cheddar cheese, and chipotle ketchup.
I found the warm, golden brioche bun to be my favorite part of this sandwich. As all bread served at Eggslut was made locally and delivered fresh, this wasn’t surprising. While simple, the firm yet fluffy bun held up to all the ingredients piled inside. Lightly toasted on the inside, the sweet and buttery bun almost melted in my mouth.
If you prefer your bacon crispy and charred, then you will be a fan of this salty, rich applewood bacon. Not only flavorful, the bacon added a crunchy texture to the sandwich. I enjoyed how the sweet brioche bun complemented the smoky bacon. Unfortunately, I found the cage-free over medium egg to be overcooked. While not dry, missing from the fully cooked egg was any runny yolk. Being a breakfast sandwich, I wanted the rich, golden yolk of the egg to explode over the bacon, bread, and thick layer of melted cheddar cheese.
While ketchup doesn’t pair well with eggs, the final component of this sandwich, the sweet and tangy chipotle ketchup, somehow did. The sauce complemented the smoky bacon and added an extra level of flavor. If you aren’t a fan of spicy foods, no need to worry. This sauce tasted more like ketchup than spicy chipotle. If this isn’t your thing, just ask them to hold the sauce.
While you won’t find table service at Eggslut, what you will find is excellent customer service. While lines can be long, the well trained staff kept the line moving quickly. Cashiers were friendly to each guest while chefs pumped out sandwich after sandwich in record time. While the food was great, the service might have been better.
If you are looking for a traditional sit down breakfast restaurant, then Eggslut might not be the place for you. If you’re a fan of bold flavors, and enjoy bacon, eggs, and cheese, especially after a long night of drinking on the Las Vegas Strip, then Eggslut is your spot. While seating was limited, the customer service and food was excellent. While you will have to wait in line, the wait for Eggslut is worth it.
